Risotto

So, my baked potato obsession has subsided and now I'm cooking risotto all the time. It's like, I can only hold one potential meal in my head at a time.

I made smoked mackerel, stilton and potato salad with a lemon vinagrette dressing inspired by this recipe:

It was mighty. I might try making it with beetroot and horseradish one day. The stilton was a winning addition though.
